How to Cook Organic Chicken Cooked in Traditional Cyder

Chicken is justifiably one of the most popular meats thoughout the whole world.
It is very lean, is an excellent source of protein, very versatile and plays a major part in many diet recipes. If you are able to buy an free range chicken, all the better, as it will be free from any hormones or other unhealthy additions. It’s also a good idea from the animal welfare point of view, as most of the supermarket chickens are housed in conditions that are absolutely awful.

If you are not trying to lose weight, ther is no need for concern, there is more to chicken than low carbohydrate recipes. However, almost all recipes using chicken will be, in general, healthier for you than the same recipes cooked using alternative meats, like beef or pork.

Here is an easy to cook recipe that will please your family and friends.

You will need:

One chicken (approx. 3.5 lb)
Two C. of cyder
6 Fresh Apples (pared and quartered)
salt (as needed)
pepper (as required)
1 teaspoonful cornstarch
Half cupful whipping cream (light)
1 Tbs of fresh lemon juice
1/3 C. of butter
Two tablespoons of olive oil
A quarter tsp. cinnamon (not obligatory)
Four spring onions, (chopped fine)
2 whole cloves
A quarter teaspoon ginger
One sprig of parsley, (chopped fine, for the garnish)
Half teaspoonful dried thyme
Two teaspoons of sugar

Method:

Clean the Chicken and dry it well.
Combine some pepper and salt and rub it into the chicken (exterior and interior)
Pour the lemon juice over the apple pieces.

Take a large frying pan or skillet and melt half the butter then add the olive oil.
Put half of the apple pieces into the pan and cook gently for five min. (until they have browned a little)
Mix in the ginger and give it a few stirs, heating it a short while longer to enable the ginger to develop it’s flavours.
Stuff the chicken with mixture from the frying pan and close the cavity by tying with string or by ‘pinning’ it with a metal or wooden skewer.

Slowly melt the rest of the butter in the pan and then add the chicken to the skillet and fry until the skin is browned a little, turning it so it browns evenly.
Place the bird in a big oven ready casserole dish with a tight fitting lid.
Take the rest of the apple, the spring onions, ground cinnamon, dried thyme, sugar and cloves and add them all to the frying pan.

Heat for two to three minutes then add the apple cider and increase the heat to start the mixture boiling.

When the traditional cider is boiling, add it to the casserole and put the lid on the pot.

Put in the oven and cook for about 45 minutes at 400 Fahrenheit

When the chicken is ready, put the chicken onto a heated platter to keep warm whilst the gracy/sauce is prepared.

Skim the fat from the contents of the casserole pot and then increase the heat, boiling the liquid away until there is only one cupful left.

Add the cornstarch and cream, and stir constantly till it reaches a nice creamy consistancy.
Season with salt and pepper, and then pour over the chicken

Sprinkle the parsley garnish over and serve.

If you want to keep the whole meal healthy, you could serve the chicken with steamed broccoli or spring greens and sauteed potatoes.
